Cooking Class: French Pastry Techniques

In this cooking class with Chef Katie, you will learn how to prepare an array of French pastries completely from scratch using high-quality ingredients and smart French pastry techniques.


Chef Katie will begin the class by teaching you how to prepare the pâte à choux dough, which you will then shape and transform into profiteroles, eclairs, and gougeres. Then, you will learn how to create an array of fillings and glazes, including a classic pastry cream, a luxurious and velvety mousseline sauce, a cheesy mornay sauce, and chocolate ganache.


Our cooking classes are designed to be social events that do not require any previous experience. Guests are welcome to purchase beer to enjoy during the class.

Location was convenient. It was very close to the subway. I absolutely love the macaron class I took here. We worked in groups of 3 or 4. The ingredients were prepared for us to work with. No measurement was done by us. We had a pretty roomy kitchen area to work in. We made 3 batches of macaron: Strawberry Macaron with Champagne Buttercream, Mint Chocolate with Dark Chocolate Ganache and Bacon Macaron with Maple Buttercream. It was great learning the process of how it's made from the meringue to the piping and the little tips to help along the way. The instructor I had was Katie. She was very attentive and she also had assistants helping with the cleaning.

I had so much fun with Chef Katie. We learned to make macaroons and played with colors and flavors. We also made and decorated cupcakes too. It would be so fun with kids or for a birthday.
